Ever heard of Hibiscus Agua Fresca? Yum, yum, yum!
This is a refreshing Mexican mocktail that's quite similar to our Nigerian zobo—but with a delicious twist. Think of it as zobo, upgraded.
While both drinks are made from hibiscus leaves, Hibiscus Agua Fresca combines fresh fruits, herbs and spices to create a lighter, fruitier and more refreshing drink.


Ingredients
Dried hibiscus leaves
Beetroot (chopped)
Fresh mint leaves
Lemongrass
Ginger (crushed)
Cloves (crushed)
Black pepper (crushed)
Fresh cucumber
Watermelon
Pineapple
Non-nutritive sweetener (or your preferred sugar substitute)
Water
The cucumber, watermelon and pineapple should be roughly blended, not completely smooth. You want some pulp to remain because that's what gives the drink its refreshing texture.


Method
Start by washing the hibiscus leaves thoroughly.


Place them in a pot with water and add the chopped beetroot, mint leaves, lemongrass, crushed ginger, cloves and black pepper.


Allow everything to boil until the hibiscus releases its rich colour and flavour.


Next, add the pineapple rind (the peel). Don't throw it away—it adds extra flavour and helps soften the naturally sour taste of the hibiscus.


Once everything has cooked well, remove the pot from the heat and allow it to cool slightly.


Strain the mixture using a fine sieve or, even better, a cheesecloth. Hibiscus leaves often contain tiny particles of sand, so using a cheesecloth gives you a cleaner drink.


If you feel the extract is too concentrated, you can add a little more water to the strained hibiscus leaves and strain them a second time.


Pour the strained juice into a clean bowl and add your preferred non-nutritive sweetener. The drink should be pleasantly sweet, not overly sugary. Too much sweetener can leave an unpleasant aftertaste.


Next, stir in the roughly blended cucumber, watermelon and pineapple. These fruits add natural sweetness, a refreshing flavour and a pleasant fruity pulp.


Pour the drink into bottles or containers and refrigerate until chilled.
